Roasted Cauliflower Burrito Bowls

Roasted cauliflower might seem like an unusual ingredient for a burrito bowl, but trust us, it pairs perfectly with the other ingredients AND sneaks in a few extra veggies.

Roasted Cauliflower Burrito Bowls

Ingredients

Roasted Cauliflower
Mashed Beans
Pico de Gallo
  • 2 roma tomatoes diced
  • 1/4 cup red onion diced
  • 1/4 cup cilantro chopped
  • 1 tsp olive oil 
  • 1 lime wedge 
Other 
  • 1 avocado sliced
  • 1 cup rice 
  • Lime wedges for garnish 
  • Crushed chili peppers for garnish 

Preparation

  1. Preheat your oven to 425°F or 220°C. Chop the head of cauliflower into bite sized florets, and drizzle with 1 tsp of olive oil. Stir to coat, then sprinkle on 2 tsp of Oaxaca Taco Seasoning, and stir to evenly coat. Roast in the oven for 40 minutes, or until cauliflower is lightly browned and is starting to get crispy.
  2. While the cauliflower is roasting, prep the mashed beans, pico de gallo, and rice.
  3. For the mashed beans, add 1 can of black beans (drained and rinsed) to a medium sized pot, along with ½ cup of water and 2 tsp of Oaxaca Taco Seasoning. Warm over medium heat for 15 minutes, or until beans are soft. Remove from heat, and mash with a potato masher until it reaches your desired consistency.
  4. Make your pico de gallo by mixing 2 roma tomatoes, ¼ cup red onion, ¼ cup cilantro, 1 tsp olive oil, and 1 squeeze of lime together in a bowl.
  5. Cook 1 cup of rice according to the instructions on the package.
  6. When everything is ready, assemble your bowl! Add rice, mashed beans, pico de gallo, roasted cauliflower, and sliced avocado to a bowl. Garnish with a wedge of lime and crushed chili peppers. Enjoy!

Note

This recipe is naturally plant based, but can be modified based on your preferences. Feel free to add grated cheese, sour cream, ground beef, or ground chicken to customize your bowl.
